Step 1:
You will need…
* for the salsa:
* 2 ripe tomatoes
* ½ red onion
* 8 basil leaves
* 1 Tbsp olive oil
* salt and pepper
* for the soup:
* 1 600g/ 21oz can of cooked Cannellini beans , or any other white bean
* ¾ ltr water, approximately
* 4 Tbsp olive oil
* garlic cloves, peeled & chopped
* ½ tsp red chilli flakes , optional
* 2 basil leaves
* salt and pepper
* 5 1⁄3 oz parmesan cheese, grated
* a sprig of basil, to garnish
* 1 chopping board
* 1 small knife
* 1 large knife
* 1 medium pot with lid
* 1 colander
* 1 pair of scissors
* 1 wooden spoon
* 1 spoon
Step 2:
Prepare the beans
Drain the white beans, using a colander and rinse briefly.
Step 3:
Combine the ingredients
Add four tablespoons of olive oil into the cooking pot, then add the garlic and the red chilli. Tear two of the basil leaves into large fragments and also add to the pot.
Cook over a low heat for 2 to 3 minutes, stirring occasionally.
Step 4:
Cook the beans
Add the white beans and then enough water to cover the ingredients and allow to cook, covered with a pan lid, over a low to medium heat.
Use a wooden spoon to crush about a quarter of the beans against the side of the pot. This will help to thicken the soup. Cover with the lid again and allow to heat through. As the soup comes to the boil, turn down the heat and simmer for 15 minutes uncovered.
Step 5:
Make the salsa
To make the salsa, core the tomatoes and chop finely. Chop the onion finely and cut the basil leaves into strips.
Stir the mixture together well then add one tablespoon of olive oil and stir. Season with salt and pepper and stir again.
Step 6:
Serve
Transfer the white bean soup to a bowl and add a generous helping of salsa on top.
