You Will Need

* Carrots
* Red Bell Pepper
* Onion
* Salt & Pepper , To season
* Garlic
* Broth
* Cooked Potatoes
* Spinach
* Crushed Red Pepper
* Cream
* Parmesan Cheese
* Sour Cream

Step 1:
Prepare The Vegetables
In a large pot saute carrots, red bell pepper and onion
Season with salt and pepper.
Step 2:
Mash The Potatoes
Add garlic and broth.
Add cooked potatoes and mash.
Step 3:
Add The Spinach
Add spinach and remaining broth.
Stir mixture until spinach is cooked.
Step 4:
Blend
Add a pinch of crushed red pepper.
Pour mixture into blender and puree until smooth.
Step 5:
Serve
Return mixture to pot and finish with cream and parmesan cheese.
Serve piping hot with a dollop of sour cream.
